This Annabel Karmel recipe, (we’re huge fans!) has been such a great hit in our households. Our little ones can’t get enough. With hidden veggies on the inside, and crispy, flaky pastry on the outisde they make the best snacks or lunches on the go.
And, they taste just like pizza. Bonus!
Ingredients
1 x 320g puff pastry ready rolled
3 tbsp sundried tomato paste
50g Piccolo tomatoes, chopped
½ red onion, finely chopped
3 tbsp basil, chopped
25g Parmesan, grated (or vegetarian alternative)
25g mozzarella, grated
Method
Preheat the oven to 200C Fan
Unroll the pastry. Spread the sundried tomato paste over the pastry leaving a 2 cm border around
the edge.
Sprinkle with tomatoes, onion, herbs, and cheese. Season. Roll up lengthways to make a tight long
roll.
Chill for 30 minutes.
Slice into 1 inch /2.5cm slices and arrange on a large baking sheet lined with non-stick baking paper.
Bake for 20 to 25 minutes until golden and crisp.
We even added some blended carrot and spinach to the mix!
